Wipe mushrooms clean with a damp paper towel. Pop stems off caps. Slice caps into 1/4 inch thick slices. Slice stems.
Heat up a pan and add vegetable oil. Add mushroom caps and stems. Sauté until soft. Add minced garlic, chopped thyme if using and sauté until garlic is soft. Careful not to brown garlic. Add more oil to pan if necessary and lower heat if you need to.
When garlic is soft, add 1/4 tsp coarse salt and 1/4 tsp ground black pepper. Stir and heat for one minute. Remove mushrooms from pan and set aside.
To the empty pan, add butter and melt. Add flour and stir, cook for a minute. Stir in milk and bring to a boil. Cook for 30 seconds. Add mushrooms and stir. Taste and adjust salt and pepper. Sauce can be mixed with cooked pasta and served. If you wish, add grated parmesan to sauce before mixing with pasta. Garnish with chopped parsley if desired.
Boil water, add 1 tbsp coarse salt and cook pasta until tender. Cook pasta and sauce at the same time, so they will be ready to eat. Cooked pasta can be taken out of water and added directly to pan with sauce. Use a little pasta water to thin out sauce if you need to. Toss pasta well with the sauce and serve hot.
Can I use 2% reduced fat milk or will it not turn out the same?

Hi, yes you can use cream. Skip the flour and butter step. Bring about 1.5 cups of cream just to a boil and add rest of the ingredients. Add pasta water to thin it out if necessary. Enjoy 🙂

Hi Kay.. Your question is not silly. I wipe the mushrooms bc if you put them on water they soak all the liquid and they dont cook as nice on the pan.
I just recently started to make fresh pasta from zero at home. I usually use tomato pasts sause. Somehow, fettuccine looks and tastes better with white creamy sauce. I live in the US, but my cousine from Jordan shared with me your recepie. I just made it and it came out FABULOUS. THANK YOU. Easy to make. I used 1% milk because it is what i have and it still came out great. I served it with talapia fillet. Yummy yummy. My husband said it was fantastic.

I think cooked ham, chicken, turkey, or even shrimp would be wonderful in the sauce. Just pay attention to the sauce and add more pasta water, milk, or cream to it if it’s too thick or dry. You might even try adding a mild white wine, like a sauvignon blanc to the mushrooms and garlic while they’re cooking.

I love sweet onions so I’m going to add a chopped one to the mushrooms and garlic in the skillet. Adding 1/4 to 1/2 cup of the pasta water to the sauce will help the sauce cling to the pasta and it will make the sauce thin enough to use bread or toasted homemade garlic bread to get every bit of it. Yummy! :>)
