Fluffy Garlic Butter Biscuits

Ingredients
  

  • 2cups/10oz/285g all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 6 tbsp unsalted butter
  • 10oz/295ml/1 1/4 cup buttermilk
  • 1/4 cup flat leaf parsley
  • 3 tbsp butter
  • 1.5 tbsp minced garlic

Instructions
 

  • Heat your oven to 400 degrees Fahrenheit or 205 degrees Celsius. To a bowl, add all purpose flour. Add salt, sugar, baking powder, baking soda and garlic powder, whisk everything and set aside.
  • Cut very cold butter into small pieces, thinner than cubes. Put butter into flour and mix into flour using your hands. Press butter pieces into flour until crumbly. It's fine to have some bigger pieces of butter. This should take no more than a minute and a half.
  • Pour in 1 cup of buttermilk and mix with a fork. Add remaining 1/4 cup buttermilk if necessary. Use a spoon or your hands at the end to incorporate any flour at the bottom of the bowl. Do not overwork dough, just bring together. This should take no more than a minute.
  • Grease a cast iron pan or baking pan with butter. Use an ice cream scoop and scoop 9 biscuits and place them in the pan. You can also scoop 7 larger biscuits. Any leftover dough, just pinch off and put on top. Bake in the heated oven for 13 to 15 minutes.
  • While the biscuits are baking, make the garlic butter. Heat up a small pan, on low heat, melt 3 tbsps butter, add the garlic and cook for 5 to 7 minutes until the garlic is soft and just about to turn golden. Make sure to keep the heat on low or the garlic will burn. While the garlic is cooking, chop the parsley.
  • When the garlic is done, stir in the parsley. Add salt if you used unsalted butter. Brush garlic butter all over the cooked biscuits and serve hot.
