Watermelon Pineapple Salad
Cold, tangy and sweet salad with a little bit of heat
Ingredients
- 6 cups seedless watermelon cut into 1 inch chunks
- 3 cups pineapple cut into 1 inch chunks
- 1 tsp lemon zest
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1 tbsp honey
- 2 pinches salt
- 1 jalapeno ribs and seeds removed
- 4oz/113g feta cheese
- 1 tbsp mint leaves
Instructions
- For the dressing, zest the lemon and put it into a measuring cup. Add fresh lemon juice, olive oil, honey, 2 pinches salt and minced jalapeno. Whisk it well, taste and add more honey or salt if you need to.
- Put the cut up watermelon in a large serving bowl. Add the pineapple. Pour the dressing over and mix well. Refrigerate this for a few hours until ready to serve. Then add cubed feta cheese. Tear up fresh mint leaves and add to bowl. Mix and the salad is ready.
- *** If using large jalapeno, only use half. ***Add more honey if your fruit is not very sweet.
