Ingredients
- 8 cups watermelon cut into 1 inch pieces
- 8oz/226g arugula
- 6 oz kalamata olives
- 6 oz feta cheese
- 1/2 cup mint leaves torn up
Dressing
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 tsp salt
- 2 big pinches red chili flakes optional
Instructions
- Combine dressing ingredients in a measuring cup and whisk well. Taste and add sugar if lemon is very sour.
- Place cut watermelon in a big bowl. Add mint and pour on dressing. Mix well. Add arugula and olives. Toss gently. Top with crumbled feta cheese. Serve immediately.
- ***To make ahead one to two days - cut watermelon, cover and place in serving bowl in fridge. Make dressing and refrigerate. Combine all ingredients before serving.
