Made without eggs, these fritters are a fantastic option for those following a vegan or vegetarian lifestyle.
Ingredients
- 2 medium zucchini
- 2 medium carrots
- 1/2 small onion
- 1 tbsp lemon zest
- 2 tbsp flat leaf parsley
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 cup all purpose flour more as needed
- olive oil or vegetable oil
Instructions
- Grate zucchini, carrot and onion on large holes of box grater and place in a bowl. Add lemon zest, parsley, salt, pepper, and garlic powder. Mix well. Add ΒΌ cup all purpose flour. Mix well. Add remaining flour and mix.
- Heat up a pan with a little olive or vegetable oil, enough to coat the bottom. Drop tablespoons full of batter and spread out gently. 3 large fritters will fit in a 10 inch pan. Cook on medium heat for a few minutes on both sides until golden brown. Turn heat down if they are browning too fast. Drain on paper towel lined plates.
- Serve with lemon wedges, ketchup or sour cream with chives and/or parsley. This recipe makes 6 to 8 fritters depending on how large you make them.
- ***When making second batch, add more flour and mix, if there is a lot of liquid accumulated in bowl.
