Avocado Mango Salad

Healthy and Tasty Avocado Mango Salad that you won't stop eating!

Ingredients
  

  • 2 avocados
  • 4 mangoes
  • 8 oz/226g cherry/grape tomatoes
  • 3 tbsp cilantro or flat leaf parsley

Dressing

  • 3 tbsp lime juice
  • 3 tbsp olive oil
  • 2 tsp honey
  • 2 pinches red chili flakes optional
  • salt to taste

Instructions
 

  • Make the dressing first. Squeeze the lime juice into a measuring cup. Add salt, honey, red chili flakes and olive oil. Whisk well and set aside.
  • Cut the tomatoes in half and put them into a big bowl. Peel the mangoes. Cut them in half close to the pit. Cut the sides off. If you’re not used to cutting mangoes, they are a little slippery so you can use gloves to be safer. Cut into bite size pieces.
  • Finely chop the cilantro or parsley. Save the avocados for last so they don’t turn brown. Use a cloth to safely remove the pit from your knife. Go around the avocado half with your finger and remove the skin. Cut into big bite size pieces. Whisk the dressing and pour into the bowl. Mix gently to avoid mashing the avocados.
