Mexican Salad Recipe

Healthy, flavorful and filling Vegetarian and Vegan Salad

Ingredients
  

  • 1 bunch romaine lettuce chopped
  • 1/2 red onion chopped
  • 1 cup tomato cored, seeded and chopped
  • 1 cup sweet corn cooked
  • 15 oz can black beans drained
  • 1/4 cup cilantro leaves chopped

Dressing

  • 1/4 cup lime juice
  • 1/2 large jalapeno pepper seeded and minced
  • 1/2 tsp garlic minced
  • 1/2 tsp salt
  • 1/2 tsp sugar

Optional

  • cheddar cheese grated
  • avocado cut up

Instructions
 

  • Whisk all dressing ingredients. Taste and adjust salt and sugar
  • Put beans, corn, tomato, onion and cilantro in a large bowl. Pour dressing on top and mix well. Spread lettuce on a dish. Pile the dressed ingredients on top and serve immediately. Grated cheddar cheese and avocado cut up are optional.
