Basic Khichdi Recipe
Comfort food made easily in a pressure cooker.
Ingredients
- 1cup/180g/6.3oz basmati rice
- 1cup/180g/6.3oz masoor dal
- 2cups/230g/8oz frozen or fresh vegetables
- 5cups/1.2l/40oz water
- 1.5 tsp salt more to taste
- 1/2 tsp ground turmeric
- 1/4 tsp chili powder
Instructions
- Different types of rice and dal can be used in this recipe. Place rice and dal in a bowl. Wash a few times to get rid of impurities. Drain well.
- Place drained rice and dal in your pressure cooker. I used the Instant Pot Mini. Add vegetables, salt, turmeric, chili powder and 5 cups of water. Stir and cover pot. Press pressure cook and cook for 15 minutes. Turn off pressure cooker and let sit for 5 minutes. Release pressure and open lid. Taste and add more salt if you wish. Add chopped cilantro if you wish. Serve Khichdi in bowls topped with ghee. Plain yogurt and Indian pickle are traditional accompaniments to this simple Khichdi.
