Ingredients
  

  • 3 cups carrots
  • 3 cups pineapple
  • 1 inch ginger
  • 1/2 lime or 3 tbsp lime juice
  • 2 cups water

  • Peel, trim ends and cut carrots into chunks that your blender can process. Trim ends off pineapple and cut peel off. Cut pineapple in half and half again. Remove core. Cut pineapple into chunks that your blender can process. Do not worry about removing the eyes of pineapple, just the peel and any green parts on the flesh is enough. Juice lime to get about 3 tablespoons of juice or cut off peel and use the flesh of half of a lime. Peel ginger and cut into small pieces.
  • Into a blender, put pineapple, lime flesh or juice, ginger and carrots. Pour in 2 cups/16oz/450ml of filtered water. Blend until smooth. Set a fine mesh strainer over a large measuring cup or bowl. Pour as much juice as will fit into strainer and use spoon to move liquid back and forth to strain. Press on pulp to get all the juice out. Discard pulp or used in baking. Strain remaining juice. Wash strainer in between if it gets coated with pulp.
  • This juice will last a few days in the fridge. It can be drunk as is or served over ice.
