Chicken Curry for Beginners

Easy Chicken Curry anyone can make very quickly

Ingredients
  

  • 4 tbsp vegetable oil or coconut oil
  • 2lbs/900g chicken thighs boneless, skinless cut into bite size pieces
  • 8oz/226g yellow onion minced
  • 3 tbsp garlic minced
  • 2 tbsp ginger minced
  • 1/2 tsp ground turmeric
  • 1/2 tsp red hot chili powder to taste
  • 1 1/2 tbsp ground coriander
  • 1/2 tsp ground cumin
  • 1 tsp garam masala
  • 6oz/170g crushed tomatoes
  • 1 1/4 tsp salt to taste
  • 1/2 cup boiled water more as necessary
  • cilantro leaves optional

Instructions
 

  • Heat up oil in a pot. Add onion, ginger and 1/4 tsp salt. Stir and cook until soft. Add garlic, stir and cook until golden brown. Add all spices and 1 tsp salt (or to taste). Stir for 15 seconds. Add chicken, mix well and cook for 5 minutes uncovered. Stir, cover and cook for 10 minutes. Stir occasionally.
  • Add 1/2 cup boiled water, mix, cover and cook for 5 minutes or until chicken is tender. Stir in crushed tomatoes, cover and cook for 5 minutes or until oil separates from sauce. Garnish with chopped cilantro leaves if desired.
  • ***I used canned crushed tomatoes in this recipe. They are thick and a deep red in color.
    ***When cooking chicken, add boiled water when necessary.
