Cucumber Salad

Ingredients
  

  • 2 medium cucumbers 1.3 lbs/ 600g approximately
  • 1/2 medium Onion
  • 1/2 cup parsley
  • 3/4 tsp Coarse Salt more to taste
  • 1/4 tsp Ground Black Pepper
  • 1.5 tsp sugar more to taste
  • 4 tbsp Vegetable Oil
  • 5 tbsp apple cider vinegar

Instructions
 

  • Cut the onion into very small pieces. Chop the parsley. Trim one end of the cucumber if you're using a mandolin. The other end will be in the holder so we don’t have to trim it. Slice the cucumbers with a mandolin or knife.
  • Put the cucumbers in a bowl. Add the onion, parsley, salt ground black pepper, sugar, vegetable oil and apple cider vinegar. Mix this really well. Taste it. Add more salt and/or sugar if you like. Put the salad in the fridge for an hour. Then it’s ready to serve.
