Ingredients

  • 1lb 9oz/700g 4 large bananas very ripe
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/2 cup melted unsalted butter
  • 3/4 cup dark brown sugar
  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 2 pinches ground nutmeg
  • 1 cup chocolate chips

Instructions

  • Heat oven to 350F/180C. In a large bowl, mash peeled bananas. Add eggs, vanilla extract and milk. Mix well.
  • In a cup, mix melted butter and brown sugar together. Add to banana mixture and mix well.
  • To a bowl, add flour, sifted baking powder, baking soda, salt, cinnamon, cloves and grated nutmeg. Mix well. Add to wet ingredients and mix to combine.
  • Coat chocolate chips in a litte flour and sieve to remove excess flour.
  • Add chocolate chips to batter and fold in.
  • Butter and flour a 9x4 inch loaf pan (or similar size). Pour in batter, tap pan on counter 3 times. Bake in heated oven for 45-60 minutes until a toothpick inserted into the center of the bread comes out clean or with very few crumbs.
  • Cool pan on cooling rack for 30 minutes. Run an offset spatula around bread and pull in gently on all sides. Turn over pan onto your hand and tap bottom of pan a few times so bread releases easily. Cool bread on cooling rack. Can be served slightly warm.
