Grilled Chicken Jamaican Style

Ingredients
  

  • 8 chicken thighs bone in, skin on
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1 tsp Coarse Salt
  • 1 tsp Ground Black Pepper
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1 tbsp dried basil
  • 1 tbsp dried thyme
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 tbsp dry mustard
  • 1/4 cup hot pepper sauce

Instructions
 

  • Combine all ingredients except chicken in a food processor and blend. Wash and dry chicken thighs. Pour marinade over chicken and mix well. Grill right away or marinate for a few hours in the fridge.
  • Grill using charcoal for best flavor. 350 to 375 degrees Fahrenheit or 180/190 Celsius. Place chicken on opposite side of hot coals. Cook approximately 20 minutes on one side and 20 minutes on the other. Place directly over hot coals for the last few minutes to crisp up skin if desired.
  • When cooked, the temperature of the chicken should be at least 165 degrees Fahrenheit or 74 degrees Celsius. A couple of degrees over is fine for chicken thighs. If you’re using boneless meat for this recipe, especially white meat, grill it directly over the coals for a few minutes on each side, check the temperature and move to the cool side of the grill if it’s not 165 degrees.
