Ingredients
- 1kg/2.2lbs chicken breast boneless skinless cut into 1 inch chunks
- 1/4 cup olive oil
- 1/4 cup lemon juice about 1.5 large lemons
- 2 tbsp garlic chopped
- 1 tsp fresh thyme leaves or 1/2 tsp dried
- 1 tbsp fresh oregano leaves or 1.5 tsp dried
- 1 tsp salt to taste
- 1 tsp ground black pepper

Instructions
- Finely chop thyme and oregano leaves. Add olive oil, lemon juice, garlic, oregano, thyme, salt and pepper to a bowl. Add chicken and mix well. Cover and marinate for 30 minutes in the refrigerator. Skewer the chicken pieces leaving a little gap in between each piece. Remove as much of the garlic as possible to avoid burning.
- Heat up your grill to high. Place the chicken kebabs on the hot grill and cook on high heat for two minutes. Turn them over and cook for another 2 to 3 minutes. Then lower the heat to medium and cook for less than 10 minutes depending on your grill. Turn them over once or twice as needed.
- The meat should be 165 degrees F or 74 degrees C when cooked. You can also press the meat with your finger and it should feel firm with a little give. It shouldn’t be very hard because then it’s overcooked. My skewers took less than 15 minutes total on an indoor electric grill.
- You can make these skewers in the oven starting on high heat, then turning to medium. Use the broiler setting for 2 minutes to give color to the chicken if needed.
- Use wood or steel skewers. Soak in water for 30 minutes if using wood skewers. I used 10 inch bamboo skewers and fit 5 chunks of chicken on each skewer. 6 smaller pieces of chicken on one skewer. If your chicken pieces are uneven, skewer the small ones together and the large ones together so they cook evenly.
- *** I used 1 1/4 tsp of salt for the chicken. If you don't like too much salt, use 1 tsp instead.
