Macaroni Salad
Creamy Macaroni Salad perfect for a picnic or barbecue.
Ingredients
- 2 cups elbow macaroni 8 ounces
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/4 medium red onion
- 2 tbsps apple cider vinegar
- 1/2 tsp salt more to taste
- 1/2 tsp Ground Black Pepper
- 2 tsps sugar
- 2 1/4 tsps brown mustard
- dash hot sauce
- 1/2 cup mayonnaise
- 1/2 cup whole milk yogurt
Instructions
- First, put on a large pot of water to boil. Cook two cups of macaroni until tender.
- In the meantime, cut into small dice - half of a large green bell pepper, half of a large red bell pepper, 1/4 of a medium red onion. Put that in a large bowl and add 2 tbsps apple cider vinegar, 1/4 tsp salt, 1/2 tsp ground black pepper, 2 tsps sugar, 2 tsps brown mustard and a dash of hot sauce. Mix well.
- Add cooked, drained macaroni to the vegetables and mix well. Leave to cool.
- When cool, add 1/2 cup regular mayonnaise and 1/2 cup plain yogurt, mix well. Taste and add more salt if necessary.
- Leave to chill for at least a few hours.
