Millet Dosa Recipe

High Protein, Easy, Healthy Millet Multigrain Dosa Batter

Ingredients
  

  • 1/2 cup finger millet/ragi
  • 1/2 cup foxtail millet
  • 1/2 cup green gram/mung bean whole
  • 1/2 cup urad dal split
  • 1/2 cup quinoa
  • 1 tsp methi/fenugreek seeds optional

Instructions
 

  • Wash quinoa and millets under running water in a fine mesh strainer. Drain and put into a bowl. Wash green gram in a bowl of water. Drain water and wash two more times. Drain and place in bowl. Do the same washing process with urad dal. Drain and place in bowl. Add 1 tsp methi seeds. Cover with 5 -6 cups water. Cover and set aside for at least 8 hours or overnight.
  • Drain most of the water off the grains. Blend by filling half your blender jar with the grains. Add approximately 1/2 cup water and blend. Add more water as necessary but only enough to blend. Batter should be thick. Rub the batter between your fingers to make sure it's smooth and all the grains are broken down. Pour batter into a bowl. Grind remaining grains and pour batter into the bowl. Bowl should have enough space for batter to rise.
  • Mix batter with your clean hand. Keep sides of bowl clean or wipe down after mixing. Cover with plastic wrap or a cloth. Set aside in a warm place to rise - a few hours if you live in a warm climate - longer if you live in a cold climate.
  • Batter should be bubbly and frothy when risen, but not sour. Mix batter well. Pour desired batter into a measuring cup and add a little salt - about 1/4 tsp per cup of batter. Mix well. Follow video on how to make dosa on a griddle.
