Peel 3 lbs of sweet potatoes. Wash potatoes. Trim ends off. Cut potatoes into big chunks, about 2 inches.
Heat up a large pan on low heat, add butter, brown sugar and white sugar. Melt completely on low heat.
Mix in cinnamon, nutmeg, salt and black pepper
Add cut up sweet potatoes. Stir well. Cover and cook for 5 minutes on medium low heat. Open and stir potatoes. Cover and cook for 15 more minutes. Potatoes should be cooked in about 20 minutes total. Insert a knife into a potato chunk and if it pierces easily, they are cooked. Do not overcook.
Remove lid from pan and cook uncovered on medium heat for 8 to 10 minutes to let syrup reduce and get thicker.
If you like marshmallows, melt them on top. Toasted pecans are a wonderful topping for those who like nuts.
Move to a serving dish, wait a few minutes to serve as the syrup will be piping hot!

When I make the sweet potatoes and I taste tbem they still taste like I can still taste the actual potatoes what am I doing wrong?
