In a steel pot, pour 1 cup water, 1 cup whole milk, don’t use skim or low fat milk for this recipe. Add the half inch piece of ginger cut up and the ground cardamom. Bring this up to a boil. Make sure to watch the pot so it doesn’t boil over. Stir once in a while.
You can see the bubbles in the pot and it’s time to add the tea leaves. Add 1.5 tbsps of tea. This will make a full strength tea. If you like milder tea, add 1 tbsp of tea. Once it comes up to a boil, turn the heat down to simmer for 3 minutes.
After three minutes, I’ll add 3 teaspoons of sugar because I like my tea sweet. If you want less sugar, add 2 teaspoons now and you can always add more to your cup if you wish. Stir until sugar is melted and turn the heat off. At this point you can strain the tea into your cup.
I like to have a little froth in my tea, so I strain the tea into a cup with a spout. You get about 12 ounces of tea from the 16 ounces of liquid we started with. Now you can "pull" the tea to cool it down and get froth on top.
It’s the perfect blend of ginger and cardamom. The tea is rich, creamy and very soothing. After you try this Chai, it’ll be really hard to go back to a cup of water and a tea bag.

When I make it with the measurements you tell me it’s great.
However, my husband drinks out of a large mug and I can’t seem to make it the same as it’s more than your instruction. How much water and milk per mug would you say?
Thank you Anita for this beautiful walk in history. Funny as it may seem, I have ALL the ingredients for Chai tea, however, have never made it. I can not drink cows milk so my first time will be with Coconut milk. I truly hope it tastes original! Also, I have never learned to “PULL TEA” so this is very exciting to me! I live in Canada and am of Native American descent, so bless you for sharing this Indian recipe. I will have you in my heart to share my cup of tea with. XXX
