  1. Wash and peel cucumber. Trim both ends. Cut cucumber in half lengthwise. Remove any large seeds with a spoon. If you're using english or hothouse cucumbers, the seeds will be small and you don't need to remove them. Cut cucumber into chunks. Put into a blender. Add fresh lemon juice, peeled ginger, honey, mint leaves and pinch of salt. Blend until smooth. Taste and add more sugar or honey if you wish. This is not supposed to be a sweet drink, only lightly sweet to keep it healthy.
  2. Fill one or two glasses with ice cubes. Add a few lemon and cucumber slices if you wish. Pour contents of blender over ice cubes. Garnish with mint leaves and serve.
