I froze sweet, ripe pineapple cut into chunks. To a blender, add 1 cup coconut milk, 1 cup frozen pineapple chunks and about 1 cup of ice (6 standard cubes). If you’re using fresh (not frozen) pineapple chunks, add more ice. Blend until smooth. I didn’t add any sugar to this since my pineapple and coconut milk were sweet. You can definitely add sugar or honey if your pineapple isn’t very sweet. Garnish the glass with a piece of pineapple and enjoy!
