Roasted Garlic Potatoes

Easiest garlicky roasted potatoes!

Ingredients
  

  • 4 Potatoes
  • 1 Head garlic
  • 1 tsp Coarse Salt
  • 1 tsp Ground Black Pepper
  • 1 tbsps olive oil
  • 2 tbsps Butter
  • 2 tbsps parsley

Instructions
 

  • Heat your oven to 425 degrees Fahrenheit or 218 degrees Celsius
  • Peel potatoes and cut into wedges. Toss the potatoes with 1 tsp ground black pepper, 1 tsp salt and 1 tablespoon olive oil. Put the potatoes on a baking sheet in a single layer.
  • Cut off the top of 1 head of garlic and place in a piece of foil. Drizzle a little olive oil on top and rub all over. Cover it up and put it on the same baking sheet.
  • Roast the potatoes for 25 minutes and turn over the pieces. Roast another 20-25 minutes or until golden brown.
  • Open the foil packet and look at that garlic, it’s soft and a beautiful amber color. Squeeze out the garlic cloves into a bowl. Remove any of the peel that may have fallen in. Mash the soft garlic into a paste.
  • Melt 2 tablespoons butter in a saucepan. Add the mashed garlic and stir into the butter. Add 2 tbsps chopped parsley and stir.
  • Spoon the garlic sauce over the potatoes and toss to coat evenly.
