Spiced Grilled Chicken

Ingredients
  

  • 2lbs/900g chicken thighs, boneless and skinless
  • 2 tsp Cumin Seeds
  • 2 tsp Coriander Seeds
  • 1 tsp Fennel Seeds
  • 1 tsp whole black peppercorns
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp Red Chili Powder
  • 1 tbsp sugar
  • 2 tsp Coarse Salt
  • 3 tbsp apple cider vinegar
  • 4 tbsp Vegetable Oil
  • fresh pineapple cut up

Instructions
 

  • Place cleaned chicken thighs in a bowl.
  • In a spice grinder, grind cumin, coriander, fennel and black pepper. Put powdered spices in a bowl. Add garlic powder, onion powder, ground cinnamon, cloves, red chilli powder, sugar and salt. Mix well. Add vinegar and oil and combine. Pour marinade over chicken. Rub marinade on all chicken pieces and set aside for at least 2 hours.
  • Heat up a grill, I used a cast iron grill on the stove top. Oil the grill and place chicken on hot grill. Cook approximately 10 to 15 minutes (turning over chicken as necessary) until golden brown with some char - this will toast the spices and enhance the flavor. Serve with cut up fresh pineapple chunks. The sweet pineapple balances the spicy chicken perfectly.
  • You may substitute ground spices for the whole ones listed in this recipe.
