Spiced Roasted Sweet Potatoes

Ingredients
  

  • 2.2lbs/1Kg sweet potatoes peeled and cut into wedges
  • 3 tbsp oil vegetable or olive oil
  • 1.5 tsp Coarse Salt
  • 1 tsp garlic powder
  • 1 tsp ground cinnamon
  • 1 tsp cumin powder
  • 1/2 tsp cayenne powder will be spicy, use less cayenne for mild
  • 2 tsp paprika
  • 1 tbsp oil to coat baking pan

Dip

  • 1/2 cup greek yogurt
  • 1.5 tbsp lemon juice/ juice of half a lemon
  • 1/4 tsp Coarse Salt
  • 1/4 cup chopped parsley or cilantro

Instructions
 

  • Heat oven to 425 degrees Fahrenheit or 220 degrees Celsius
  • Coat baking pan (half sheet tray) with one tbsp oil. In a large bowl, put cut sweet potatoes. Mix 3tbsp oil with spices and pour over sweet potatoes. Mix well with your hands making sure each piece is coated with spice mixture. Bake in top rack of heated oven for 25 minutes. Rotate pan in oven after first 10 minutes. Remove tray from oven after 25 minutes as the potatoes will be cooked.
  • If you wish, flip each potato wedge and return to oven for 10 minutes or longer so they get a little crispy. They will not be very crispy, just lightly.
  • Mix all ingredients for dip, adjusting salt or lemon juice as necessary. Serve with roasted sweet potatoes.
