Vegetable Biryani in Rice Cooker

Easy and healthy vegetarian weeknight meal.

Ingredients
  

  • 1 cup/ 180g basmati rice
  • 2 tbsp ghee
  • 1 cup spinach chopped frozen or fresh
  • 1/4 cup yellow onion chopped
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • 1 carrot chopped
  • 1/2 tsp Cumin Seeds
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 1.5 cups/ 375ml water

Instructions
 

  • Heat up rice cooker and pour in 2 tbsps of ghee. Add cumin seeds. Stir and cook for a minute. Add chopped onion, ginger and garlic. Sautee until soft. If you want heat, add 1 green chile chopped.
  • Add turmeric and sautee 30 seconds. Add carrots, spinach, salt. Stir, cover and cook for 3 mins. Add rice and mix well. Add water, cover and cook for 20 mins or until done according to your rice cooker. Open lid, give it a mix and serve hot.
