This homemade lasagna is loaded with fresh zucchini, mushrooms, and spinach, layered between creamy ricotta and melty mozzarella. This classic Italian dish is a family favorite and is perfect for a vegetarian weeknight dinner.

Ingredients
  

Cooked Sauce

  • 1/4 cup Olive oil
  • 2 tbsp Garlic minced
  • 8oz/226g Mushrooms 8 oz chopped small
  • 10oz/280g Zucchini chopped small
  • 10oz/280g Red bell pepper chopped small
  • 1 tsp chili flakes less for mild
  • 2 tsp dried oregano
  • 32oz/950ml crushed tomatoes
  • Salt and sugar to taste
  • basil leaves optional

Sauce for bottom of dish

  • 8oz/236 ml crushed tomatoes
  • salt to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp Dried oregano

Ricotta Mixture

  • 15oz/425g Ricotta cheese
  • 1 large Egg
  • 2 tbsp Oregano fresh or 1 tsp dried
  • 8oz/226g Spinach fresh or frozen, chopped
  • 1 tsp garlic
  • 2 tbsp olive oil
  • Salt to taste
  • 2 cups Mozzarella grated
  • 1/2 cup parmesan grated
  • 1/2 tsp Black Pepper

Layering

  • 2 cups mozzarella grated
  • 1/4 cup Parmesan grated
  • 9 lasagna noodles no cook
  • basil leaves optional

Instructions
 

  • Cooked Sauce - heat olive oil in a pot and add garlic. Cook until soft and add mushrooms. After mushrooms have given off liquid, add zucchini and bell pepper, chili flakes, oregano and salt. Cook until tender. Add crushed tomatoes and salt/sugar to taste. Cook for 5 minutes. Add chopped basil if you have it.
  • Sauce for bottom of dish - combine all ingredients
  • Cheese mixture - heat pan and add olive oil. Cook garlic until soft. Add spinach and salt. Cook until soft. Cool to room temperature. Beat egg and mix into ricotta. Add oregano, cooled spinach, parmesan, mozzarella, black pepper and mix well.
  • Heat oven to 375 F/ 190 C. Use a 9x13 baking dish. Put sauce for bottom of dish on the bottom and spread evenly. Lay 3 noodles on top. Add some of the cooked sauce, some cheese mixture and some mozzarella. Then another layer of noodles, sauce, cheese mixture and mozzarella. Another layer of noodles, sauce and cheese mixture. Then sauce and remaining mozzarella. Add 1/4 cup parmesan on top. Cover and bake in heated oven for 35 minutes. Uncover and bake for 15 minutes. For a deep golden brown top, place dish under broiler for 2 minutes.
