Quick, Easy and Delicious Cauliflower Curry
Ingredients
- 1 medium head cauliflower cut into bite size pieces
- 5 tbsp coconut or vegetable oil
- 1/2 tsp cumin seeds
- 1 tbsp ginger minced
- 1 medium red onion finely chopped
- 1 tbsp garlic finely chopped
- 2 green chillies slit according to taste
- 3 medium tomatoes chopped
- 1/2 tsp turmeric powder
- 2 tsp Kashmiri chili powder
- 2 tsp coriander powder
- 1/2 tsp garam masala
- 1/2 tsp fennel powder
- salt to taste
- 1/4 cup yogurt
- 1.5 cups water as needed
- cilantro leaves chopped optional
Instructions
- Heat up a pot and add oil. When oil is hot, add cumin seeds. When they sizzle, add ginger and let cook for a few seconds. Add onion, 1/4 tsp salt and sauté until soft. Add garlic, green chillies and sauté until golden brown. Add tomatoes, turmeric, chili powder, coriander powder, garam masala, fennel powder and 1 tsp salt. Stir and cook for 1 minute. Cover and cook until tomatoes are soft and oil separates. Stir in between.
- Whisk yogurt smooth and stir in. Mix well, cover and cook for about 5 minutes until thick. Add cauliflower and mix well. Add water, cover and cook for 10-15 minutes until tender. Check halfway, taste and add more salt if needed. Add chopped cilantro at the end and serve hot with bread or rice.
