Cauliflower Curry Recipe

Quick, Easy and Delicious Cauliflower Curry

Ingredients
  

  • 1 medium head cauliflower cut into bite size pieces
  • 5 tbsp coconut or vegetable oil
  • 1/2 tsp cumin seeds
  • 1 tbsp ginger minced
  • 1 medium red onion finely chopped
  • 1 tbsp garlic finely chopped
  • 2 green chillies slit according to taste
  • 3 medium tomatoes chopped
  • 1/2 tsp turmeric powder
  • 2 tsp Kashmiri chili powder
  • 2 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/2 tsp fennel powder
  • salt to taste
  • 1/4 cup yogurt
  • 1.5 cups water as needed
  • cilantro leaves chopped optional

Instructions
 

  • Heat up a pot and add oil. When oil is hot, add cumin seeds. When they sizzle, add ginger and let cook for a few seconds. Add onion, 1/4 tsp salt and sauté until soft. Add garlic, green chillies and sauté until golden brown. Add tomatoes, turmeric, chili powder, coriander powder, garam masala, fennel powder and 1 tsp salt. Stir and cook for 1 minute. Cover and cook until tomatoes are soft and oil separates. Stir in between.
  • Whisk yogurt smooth and stir in. Mix well, cover and cook for about 5 minutes until thick. Add cauliflower and mix well. Add water, cover and cook for 10-15 minutes until tender. Check halfway, taste and add more salt if needed. Add chopped cilantro at the end and serve hot with bread or rice.
