Crispy Fried Chicken Wings
These wings are very crispy with a good amount of crust.

  1. Heat up a few inches of vegetable oil in a heavy pot to fry the chicken wings.
  2. In a bowl, crack 3 eggs, add 1 tsp salt, 1 tsp garlic powder and half tsp of ground black pepper. Mix this really well. In another bowl, add 1.5 cups of all purpose flour, 1.5 tsps salt, 1.5 tsp garlic powder, 1.5 tsp paprika, 1 tsp ground black pepper and 1 tsp onion powder. Mix this really well.
  3. Take each piece of chicken and dip it in cornstarch on both sides. It’s easiest to pile ½ cup of cornstarch on one side of a baking pan, dip each piece in and leave it on the tray.
  4. Now dip each piece in the egg mixture, drip off excess and put in the flour. Completely coat each piece with the seasoned flour. It’s best to use the non-eggy hand for the flour. Set the coated pieces on the same baking tray.
  5. When the oil is hot, put in a few pieces of chicken at a time. I can put 5 pieces in my pot at one time. I’m using a cast iron 3.2 quart pot that came as a combo with a 10.25 inch skillet. If you want to get the pan: https://amzn.to/2KhBxGg
  6. Cook the chicken for 8 to 10 minutes depending on how big they are. Drain them and place on a paper towel lined plate or wire rack. Keep frying them in batches. The wings are seasoned nicely so they can be eaten by themselves. Of course you can serve them with hot sauce, ketchup, barbecue or your favorite sauce.
