  1. Turn your Instant Pot on and choose Sauté function. Add cut up bacon to pot and cook until golden – not brown. (If you’re not using bacon, add 2 tbsp vegetable oil) Add onion, garlic and cook until soft. Do not burn garlic.
  2. Add beans, bay leaf, salt, sugar and cayenne. Pour in 3 cups water. Stir. Cover lid and turn valve to sealing.
  3. Press Pressure cook/Manual button and set time to 60 minutes. When time is up, hit cancel and wait for pressure to release naturally. Once float valve drops down and all pressure is released, open lid.
  4. If you want a thicker result, take most of the beans and bacon out. Mash remaining beans in the pot. Or you can turn Sauté function on and reduce liquid in the pot.
  5. *** Vegetarian version – leave bacon out. Use oil instead to sauté onion/garlic. Along with beans, add smoked paprika for smoky flavor. *** Vegetable Stock or Chicken stock can replace water for more flavor *** Use Ham hock, smoked turkey legs/wings instead of bacon.
