In the meantime, cut into small dice – half of a large green bell pepper, half of a large red bell pepper, 1/4 of a medium red onion. Put that in a large bowl and add 2 tbsps apple cider vinegar, 1/4 tsp salt, 1/2 tsp ground black pepper, 2 tsps sugar, 2 tsps brown mustard and a dash of hot sauce. Mix well.
