Ingredients
- 10oz/280g cooked salmon canned or fresh
- 2 tbsp bread crumbs
- 2 tbsp mayonnaise or 1 egg
- 1 tsp prepared brown mustard
- 1 tsp lemon juice
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/4 tsp Coarse Salt
- 1/4 tsp Ground Black Pepper
- 2 tbsp chopped parsley optional
Tartar Sauce
- 3 tbsp mayonnaise
- 2 tsp sweet pickle relish
- 1 tsp lemon juice

Instructions
- Make tartar sauce - mix mayonnaise, relish and lemon juice, pinch of coarse salt and ground black pepper. Taste and adjust salt and lemon juice. Refrigerate and prepare salmon cakes.
- Drain salmon if using canned. Place drained salmon in a bowl and mash with a fork so there are no lumps. To salmon, add all other ingredients. Mix well and divide into 4. Form 4 balls and press them in the palm of your hand gently to form patties. Heat up a skillet and pour a few tablespoons vegetable oil just to coat bottom of pan. When oil is hot, gently place patties in pan. Cook until golden brown on both sides, about 2 to 3 minutes on each side. Remove from pan and serve with tartar sauce and lemon wedge if you wish.
- Use more mayonnaise if necessary to form the salmon mixture.
