Salmon Cakes

- 10oz/280g cooked salmon canned or fresh
- 2 tbsp bread crumbs
- 2 tbsp mayonnaise or 1 egg
- 1 tsp prepared brown mustard
- 1 tsp lemon juice
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/4 tsp Coarse Salt
- 1/4 tsp Ground Black Pepper
- 2 tbsp chopped parsley optional
Tartar Sauce
- 3 tbsp mayonnaise
- 2 tsp sweet pickle relish
- 1 tsp lemon juice
Make tartar sauce - mix mayonnaise, relish and lemon juice, pinch of coarse salt and ground black pepper. Taste and adjust salt and lemon juice. Refrigerate and prepare salmon cakes.
Drain salmon if using canned. Place drained salmon in a bowl and mash with a fork so there are no lumps. To salmon, add all other ingredients. Mix well and divide into 4. Form 4 balls and press them in the palm of your hand gently to form patties. Heat up a skillet and pour a few tablespoons vegetable oil just to coat bottom of pan. When oil is hot, gently place patties in pan. Cook until golden brown on both sides, about 2 to 3 minutes on each side. Remove from pan and serve with tartar sauce and lemon wedge if you wish.
Use more mayonnaise if necessary to form the salmon mixture.
