- 2 medium zucchini
- 2 medium carrots
- 1/2 small onion
- 1 tbsp lemon zest
- 2 tbsp flat leaf parsley
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic powder
- 1/2 cup all purpose flour more as needed
- olive oil or vegetable oil
Grate zucchini, carrot and onion on large holes of box grater and place in a bowl. Add lemon zest, parsley, salt, pepper, and garlic powder. Mix well. Add ΒΌ cup all purpose flour. Mix well. Add remaining flour and mix.
Heat up a pan with a little olive or vegetable oil, enough to coat the bottom. Drop tablespoons full of batter and spread out gently. 3 large fritters will fit in a 10 inch pan. Cook on medium heat for a few minutes on both sides until golden brown. Turn heat down if they are browning too fast. Drain on paper towel lined plates.
Serve with lemon wedges, ketchup or sour cream with chives and/or parsley. This recipe makes 6 to 8 fritters depending on how large you make them.
***When making second batch, add more flour and mix, if there is a lot of liquid accumulated in bowl.
