Barbecue Pork Ribs in the Oven

Ingredients
  

  • 3.5lbs/1.5kg St. Louis Style Pork Spare Ribs any trimmed pork ribs
  • 1 tbsp coarse salt
  • 1 tsp ground black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp smoked paprika sub sweet paprika
  • 2 tsp dried thyme leaves

Guava Barbecue Sauce

  • 6oz/170g guava paste cut into small pieces
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 1 tbsp grated ginger
  • 1/2 cup apple cider vinegar
  • 2 tbsp lime juice
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • water as needed

Instructions
 

  • Heat your oven to 350 Fahrenheit or 180 degrees Celsius.
  • Seasoning mix - to a small bowl, add salt, ground black pepper, cayenne pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Mix well.
  • Wash, and pat dry ribs with paper towels. Place ribs in a shallow baking dish or sheet tray. If necessary, cut ribs to fit in the dish. Season both sides of the ribs, patting the seasoning on to adhere. Cover the dish tightly with foil. Cook in the heated oven for 1 hour and 30 minutes.
  • Remove from oven, remove foil. With a spoon, gently spread desired amount of your favorite barbecue sauce all over ribs. I used 1/2 cup. Place dish in the oven a few inches away from the broiler. Let sauce caramelize for 3-5 minutes and remove from oven. Check often to make sure sauce doesn't burn. Wait a few minutes and cut ribs. Serve additional sauce on the side.
  • Sauce - place all sauce ingredients and 1/4 cup water in a pot. Stir, cover and cook on low heat until combined. Stir often and add more water as necessary. Once guava is melted, cover and cook on low heat for 10 minutes adding water if necessary.
  • ***Sweet paprika can be substituted if smoked paprika is unavailable.
    ***If broiler setting is unavailable, turn your oven to 450 or close.
    ***These ribs are delicious even without sauce.
