Instructions
First, cut up thick sliced bacon into 1/2 inch pieces and fry it. You can use pork, turkey or vegetarian bacon. When the bacon is crispy, drain and set aside. Add chopped onion and sauté until golden.
While the onions are cooking, crack eggs into a bowl and whisk well. When the onions are golden, add cut up cooked potatoes. You can bake or boil the potatoes, peel and cut them up. Add garlic powder, salt and ground black pepper. Sauté till you get some color on the potatoes.
Add salt to the eggs, whisk and pour into the pan. Leave the eggs alone for 30 seconds. The edges will set up, then you can mix. I use my cast iron wok because it’s almost non stick and good for making eggs. Add grated cheddar cheese, the cooked bacon, a little paprika and chopped parsley or cilantro.
You can customize your bowl by adding vegetables and sauteéing them with the onions.
