To a bowl, add all the sauce ingredients and mix to combine.
Heat up a wok or pan. When it’s very hot, add oil. Add minced ginger, stir and cook for 10 seconds. Add minced garlic, stir and cook for 10 seconds. Add chili flakes. Add sauce and stir, cook 10 seconds. Add shrimp and mix. Cook for about 5 minutes or until shrimp is tender. Stir once in a while. Taste and add more chili sauce if you wish.
Add sesame oil, scallions and chopped cilantro. Mix and serve hot over white rice.
***Use any size shrimp for this recipe. Cooking time varies according to size of shrimp.
***For less heat, add only 1 tbsp of Sriracha, taste at the end and add more if you wish
