Place drained rice and dal in your pressure cooker. I used the Instant Pot Mini. Add vegetables, salt, turmeric, chili powder and 5 cups of water. Stir and cover pot. Press pressure cook and cook for 15 minutes. Turn off pressure cooker and let sit for 5 minutes. Release pressure and open lid. Taste and add more salt if you wish. Add chopped cilantro if you wish. Serve Khichdi in bowls topped with ghee. Plain yogurt and Indian pickle are traditional accompaniments to this simple Khichdi.
