Cucumber Salad

  1. Cut the onion into very small pieces. Chop the parsley. Trim one end of the cucumber if you’re using a mandolin. The other end will be in the holder so we don’t have to trim it. Slice the cucumbers with a mandolin or knife.
  2. Put the cucumbers in a bowl. Add the onion, parsley, salt ground black pepper, sugar, vegetable oil and apple cider vinegar. Mix this really well. Taste it. Add more salt and/or sugar if you like. Put the salad in the fridge for an hour. Then it’s ready to serve.
