Baked Garlic Lemon Salmon

Ingredients
  

  • 1lb/450g salmon fillet skin on
  • 1 tsp grated garlic
  • 3/4 tsp coarse salt
  • 1/2 tsp ground black pepper
  • 1.5 tbsp flat leaf parsley finely chopped
  • 1 tbsp butter melted
  • 1 tbsp olive oil
  • 2 tbsp lemon juice

Instructions
 

  • Heat your oven to 400 degrees F or 205 C. To a small bowl, add melted butter, grated garlic, salt, ground black pepper, chopped flat leaf parsley, fresh lemon juice and olive oil. Whisk it well.
  • Put the salmon in a shallow baking dish. Pour the mixture over the salmon and spread evenly. Bake in the heated oven for approximately 15 minutes. My fillet was 1 inch thick and it cooked for 16 minutes.
  • Spoon the sauce in the dish over the salmon. You can serve with or without the skin.
  • You can take the temperature - fully cooked salmon is 140 degrees. Most people don’t like salmon to be that firm, so they cook it anywhere from 120 and up. I prefer 125, it’ll taste cooked but not very firm. You can also let it rest a few minutes after taking it out of the oven. Instead of using a thermometer, you can press the fish gently and if it feels a little firm, it’s done. The fish flakes easily and is perfectly cooked.
