Cauliflower Steak

Roasted Cauliflower Steak with Garlic

Ingredients
  

  • 1 large heard cauliflower
  • 3 tbsp olive oil
  • 1.5 tbsp garlic grated
  • 3 tbsp butter
  • 2 pinches red chili flakes
  • 3 tbsp flat leaf parsley finely chopped

Seasoning

  • 3/4 tsp salt
  • 3/4 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika

Instructions
 

  • Heat your oven to 400 degrees F or 205 C. Mix all seasoning ingredients in a bowl.
  • Wash cauliflower. Cut a little bit of the bottom stalk off, just enough so it sits flat. Cut head into approximately ½ inch thick pieces. You will get 3 “steaks” that stay together. Use the remaining cauliflower for another recipe or roast alongside steaks with seasoning.
  • Place “steaks” on a parchment lined sheet tray. Rub olive oil on both sides and season both sides with seasoning mix. Cover tray with foil. Roast in heated oven for 15 minutes. Remove from oven and take off foil. Cook uncovered for 15 minutes.
  • Insert a small knife into cauliflower to make sure it is cooked. Cook 10 minutes longer if necessary.
  • Heat up a sauce pan and add butter. When it melts, add garlic and cook for a few minutes on low heat until raw taste goes away. Garlic should not brown. Add chili flakes and stir.
  • Pour garlic butter over cauliflower and top with chopped parsley.
  • ***Vegans may omit butter and use olive oil.
  • ***Add as much or as little of the garlic butter per your taste.
