Cranberry Orange Bread

Moist Cranberry Orange Bread with Pecans

Ingredients
  

  • 1 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1 tbsp lemon juice
  • 2 tbsp orange zest
  • 4oz/113g/8tbsp unsalted butter
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup dried sweet cranberries
  • 1/2 cup pecans chopped

Instructions
 

  • Heat oven to 350 F/180 C
  • Grease and flour a 8.5 x 4.5 loaf pan
  • Add lemon juice to milk and set aside while preparing other ingredients.
  • To flour, sift in baking powder, baking soda and salt. Whisk well. Mix orange zest into milk mixture.
  • In a stand mixer or with a hand mixer, cream butter and sugar for 4 minutes on high speed. Lower speed and beat in 2 eggs, one at a time. Add ⅓ of flour mixture, then add ½ of milk mixture. Repeat with flour, milk and flour. Stir in pecans and cranberries on low speed. Turn off mixer and mix by hand to make sure no flour is trapped in the bottom of bowl.
  • Pour batter into prepared loaf pan, even out batter, tap on the counter a few times, and bake in heated oven for 45 minutes until a toothpick inserted in the middle comes out clean. Cool in the pan on a rack for 10 minutes. Remove bread from pan and cool directly on rack for 15 minutes. Cool completely or cut when slightly warm.
