Easy Pulled Pork

Pulled Pork Cooked in a Pressure Cooker

Ingredients
  

  • 3.5lb/1.5kg pork shoulder
  • 2 tsp coarse salt
  • 2 tsp ground black pepper
  • 2 tbsp vegetable oil
  • 7 cloves garlic peeled and smashed
  • 1 tbsp ginger chopped
  • 4 tbsp soy sauce
  • 2 tbsp brown sugar
  • 8oz/236ml/1cup chicken stock

Instructions
 

  • Dry the pork with paper towels. I removed the skin and fat for this recipe. Cut into 2 inch pieces. You can cut around the bone, do not cut the bone into pieces.
  • Season the pieces with coarse salt and fresh ground black pepper.
  • Heat up your pressure cooker pot (without the cover) and add 2 tablespoons vegetable oil. When hot, place half of the meat to the pot in a single layer. Cook for a few minutes on both sides until golden. Remove from pot and set aside. Cook the second batch of meat. When golden, add first batch back into pot. Add the bones to the pot. Add garlic, ginger, stock, soy sauce and brown sugar. Stir to combine.
  • Seal the cooker and cook on high pressure for 45 minutes. When time is up, let unit rest for 10 minutes, then release pressure. Remove meat from pot and shred. Spoon a tablespoon or two of liquid over top to keep meat juicy. Remaining liquid can be used in stews and soups.
  • The meat, I pile on a bun, a little barbecue sauce on top and it makes a great sandwich. If you like a lot of barbecue sauce, mix some into the meat. Melted mozzarella cheese is good on top. Coleslaw or pickles are perfect with this pulled pork sandwich.
  • ***For this recipe, I’m using an Instant Pot. You can use a standard or electric pressure cooker.
  • ***You can definitely make crackling with the skin and fat, it's a nice crispy treat.
  • ***You can sear the bones along with the cut pieces, there might not be enough space in 2 batches. I added the bones to the pot without searing to avoid a 3rd batch.
