Fish Fritters

Crispy Fried Fish Fritters for a quick and easy snack

Ingredients
  

  • 12 oz/340g cod fish boneless skinless
  • 3oz/85g red onion chopped
  • 1/4 cup cilantro leaves chopped
  • 1 tbsp ginger grated
  • 1 tbsp garlic grated
  • 2 green chiles finely sliced
  • 1/8 tsp ground turmeric
  • 1/2 tsp salt
  • 1 tbsp lemon juice
  • 1 cup all purpose flour
  • 1/4 cup rice flour
  • 2 pinches baking powder
  • 1/2 tsp salt
  • 1 cup water

Instructions
 

  • Chop fish into very small dice. Place fish in a bowl, add ¼ tsp salt, ground turmeric and fresh lemon juice. Mix well. Leave aside for 15 minutes.
  • To a bowl, add all purpose flour, baking powder, ½ tsp salt and rice flour. Whisk to combine. Stir in 1/2 cup water and mix. Stir in remaining water to make a smooth batter that is not too thick. Add more water if needed. Put the fish in and stir to combine. Add the chopped onions, garlic, ginger, green chiles and chopped cilantro. Mix well. Leave to rest and heat up oil in a pot to deep fry the fritters. Oil should be at 350 F or 180C.
  • Gently drop tablespoons of batter into the hot oil. Move them around a little so they don’t stick to each other. They cook in less than 5 minutes and are ready when golden brown. Drain on a paper towel lined plate.
  • ***These are best served with a vinegary hot sauce, green pepper sauce or ketchup and sriracha mixed together. Even just a squeeze of lemon juice is tasty for those who don’t want the heat.
  • ***If you like spicy fish, add some red chili powder during marination.
    ***Any white fish can be used for this recipe.
