Green Beans and Tomatoes

Greek Style Fresh Green Beans with Onions and Tomatoes

Ingredients
  

  • 1.5lb/680g green beans trimmed
  • 1 medium onion sliced thin
  • 4 cloves garlic sliced
  • 14.5oz/410g diced tomatoes canned or fresh
  • 1.5 tbsp fresh oregano leaves chopped
  • ¼ cup flat leaf italian parsley chopped
  • 1 tsp sugar
  • 1 tsp salt
  • 2 pinches red chili flakes optional
  • 1 cup water
  • 5 tbsp olive oil

Instructions
 

  • Wash green beans and trim both ends. Heat up a pan and add olive oil. When the oil is hot, add the sliced garlic. Give it a few seconds and then add the sliced onions. The garlic and onions should not have any color. They just need to soften a little. Cook for 2 minutes.
  • Stir in the parsley and oregano. Add tomatoes and salt. Mix the beans. Cook for 5 minutes.
  • Add sugar. Pour in the water. Mix well. Cover and cook for 30 minutes, stirring halfway. After 30 minutes, taste a bean, it should be well cooked. If your beans are really fresh and tender, they’ll be done after 30 minutes. Taste and adjust the salt and sugar. Cover and cook for 10 minutes, if beans are not tender and soft. Drizzle a little extra virgin olive oil over the top.
  • ***If you don’t have fresh herbs, it’s fine to substitute dried parsley and oregano.
  • ***My beans took a total of 40 minutes to cook. They should be soft.
