Grilled Vegetable Skewers

Ingredients
  

  • 2lbs/900g vegetables (mushrooms, zucchini, red bell pepper, red onion) cut into 1 inch pieces
  • 1 1/4 tsp salt
  • 1 tsp ground black pepper
  • 2 tsp fresh thyme or 1 tsp dried
  • 2 tsp fresh oregano or 1 tsp dried
  • 1/4 cup olive oil
  • 1 tbsp garlic minced
  • lemon wedges

Instructions
 

  • Total amount of vegetables used is 2lbs/900g. Any combination of green/yellow zucchini, red bell pepper, mushrooms and red onions. Wash and wipe mushrooms. Pop off stems and save for another use. Cut larger mushrooms in half. Smaller ones can be left whole. All vegetables should be about the same size - 1 inch/2.5 cm
  • If using wood skewers, soak them in water for 30 minutes. To a large bowl, add olive oil, garlic, herbs, salt and pepper. Mix well. Add vegetables and toss to coat. Leave aside while your grill is heating up. 15 minutes marination is adequate.
  • Thread vegetables onto skewers, alternating colors. Place on heated grill and cook on medium heat until tender, turning the skewers every few minutes and brushing them with marinade collected in the bowl. My skewers cooked on an indoor grill took 15 minutes.
  • Set skewers on serving plate and squeeze lemon over them. This recipe makes about 10 skewers - 10 inch wood skewers
  • When marinating vegetables, adjust salt and pepper to your taste.
