Mexican Salad Recipe
Healthy, flavorful and filling Vegetarian and Vegan Salad
Ingredients
- 1 bunch romaine lettuce chopped
- 1/2 red onion chopped
- 1 cup tomato cored, seeded and chopped
- 1 cup sweet corn cooked
- 15 oz can black beans drained
- 1/4 cup cilantro leaves chopped
Dressing
- 1/4 cup lime juice
- 1/2 large jalapeno pepper seeded and minced
- 1/2 tsp garlic minced
- 1/2 tsp salt
- 1/2 tsp sugar
Optional
- cheddar cheese grated
- avocado cut up
Instructions
- Whisk all dressing ingredients. Taste and adjust salt and sugar
- Put beans, corn, tomato, onion and cilantro in a large bowl. Pour dressing on top and mix well. Spread lettuce on a dish. Pile the dressed ingredients on top and serve immediately. Grated cheddar cheese and avocado cut up are optional.
