Ingredients

Topping

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 4 tbsp sugar
  • 1 cup milk

Peach Filling

  • 3 cups peaches peeled and sliced (about 6 medium peaches)
  • 1/3 cup sugar
  • 1/8 tsp salt
  • 2 tsp lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

Dish

  • 1/4 cup butter

Instructions

  • Heat your oven to 375 degrees F or 190 degrees C
  • Place butter in 8x8 glass dish and put in oven to melt
  • Place peaches, sugar, salt and lemon juice in a pot. Bring to a boil, turn down heat to medium low and cook for 2 minutes. If your peaches are hard, cook for up to 5 minutes. Taste and add more sugar if you need to. Turn heat off, add cinnamon and nutmeg. Stir well and set aside.
  • Place all purpose flour, baking powder and salt in a bowl. Whisk well. Add sugar and mix well. Add milk and mix until smooth.
  • Pour batter on top of melted butter in dish. With a slotted spoon, place peaches evenly over top. Pour juices in pot evenly over top. Do not stir.
  • Bake in heated oven for 30 to 40 minutes until top is golden brown and liquid is bubbling in the center. Wait about 10 minutes and serve warm.
  • *** Batter tastes fine with 3 tbsp sugar so you can reduce sugar if you like.
  • *** Vanilla Ice cream or whipped cream goes well with peach cobbler
