Ingredients
  

  • 3 1/4 cup/14.6 oz/414g all purpose flour plus 1/4 cup (1.1oz 31g)more if dough is sticky
  • 2 1/4 tsp/.25oz/7g active dry yeast
  • 1/2 cup/4oz/118ml whole milk
  • 4tbsp/2oz/56g unsalted butter
  • 1/4 cup white sugar
  • 3/4 tsp kosher salt
  • 1 large egg
  • 1/2 cup/4oz/113g pumpkin puree
  • vegetable oil for greasing

Filling

  • 2tbsp/1oz/28g salted butter
  • 1/2 cup dark brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice

Glaze

  • 1 cup powdered sugar
  • 3 tbsp whole milk
  • 1 tbsp salted butter
  • 1/2 tsp vanilla extract

Instructions
 

  • More flour is needed when rolling out dough. Dough can be made in stand mixer or by hand.
  • Substitute all cinnamon if pumpkin pie spice is unavailable
  • Heat milk and butter to 100 - 110 F/ 38 - 43 C Add flour to bowl of stand mixer. Add salt, sugar, pumpkin puree, beaten egg, heated milk/butter and yeast. Mix just on top. On low speed, run mixer until all ingredients are incorporated. Knead on low speed for 8 minutes until dough is soft. Add up to 1/4 cup flour in between if dough is too wet.
  • Leave kneaded dough in bowl, gathering it together with a spatula. Do not form dough with hand, just leave in bowl as is. Pat a tsp vegetable oil on top and all over. Cover and let rise until doubled, approximately 45 minutes.
  • Flour your counter and place dough on it. Sprinkle a little flour on top of dough, pat a few times and knead a few times. Form into a rectangle. Sprinkle dough underneath and on top. Roll out into a 12 x 20 inch rectangle (approximate). Use ruler as an aid.
  • Mix brown sugar and spices. Spread 2 tbsp softened butter all over dough. Sprinkle sugar and spice mixture all over, leaving 1/2 inch free on all sides. Pat mixture gently with your hands. Roll dough gently from bottom up and as tight as possible. Trim ends off. Measure and cut 2 inch wide pieces with a knife or floss. You will get about 10.
  • Place pieces in greased 9x13 baking pan. Pat each one gently. Cover and let rise until doubled, approximately 45 minutes.
  • Heat oven to 350 F/ 180 C when rolls have almost risen.
  • Remove cover and place in heated oven. Cook for approximately 20 minutes. Check at 18 minutes. Do not over cook. Remove from pan and serve while warm. Pour icing on according to your taste.
