Wash chicken thighs and pat dry with paper towels. Mix salt, cayenne, paprika, thyme, garlic powder and onion powder in a bowl. Rub both sides of chicken with this spice mixture.
Place all purpose flour in a bowl and stir in 2 pinches salt.
Put breadcrumbs in another bowl, whisk in 1/4 tsp salt and 1/4 tsp ground black pepper.
Crack egg into another bowl, whisk in water and pinch of salt.
On your counter, put the flour bowl, egg bowl and breadcrumb bowl in that order. Dip each chicken thigh in flour on both sides and shake off excess. Dip both sides in egg and shake off excess. Dip both sides in breadcrumbs making sure there's an even coating. Let chicken thighs rest on a plate for 15 minutes.
Heat oven to 350 degrees Fahrenheit/180 degrees Celsius. Coat bottom of sheet tray or baking dish with 2 tbsp oil. Place sheet tray in heated oven for 5 minutes. Pull out tray with oven mits and place chicken thighs skin side down. Cook for 30 minutes. Pull out tray, turn chicken over and cook for another 30 minutes. Let rest for 5 minutes before cutting into it.
