Thai Stir Fry

Quick and Easy Thai Stir Fry at Home

Ingredients
  

  • 8oz/226g chicken breast boneless skinless bite size pieces
  • 2 tsp soy sauce
  • 4oz/113g 2 medium carrots sliced into matchsticks
  • 4oz/113g snap peas
  • 4oz/113 bok choy
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • 1/4 cup garlic chives or scallions optional
  • 3 tbsp vegetable oil as needed

Sauce Ingredients

  • 4 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 2 tsp fish sauce
  • 1 tsp sugar more to taste
  • 2 tsp red chili sauce (optional) to taste

Instructions
 

  • Mix chicken with 2 tsp soy sauce and set aside while prepping other ingredients
  • Mix all sauce ingredients in a bowl. Use only 2 tbsps for this recipe
  • Heat up a wok or pan. Add 2 tbsp oil. When oil is hot, add chicken and cook for a few minutes until done. Transfer to a bowl.
  • To same pan, add 1 tbsp oil. Add garlic and ginger. Sauté for a few seconds until soft. Add carrots and snap peas. Cook about 2 minutes until crisp tender. Add bok choy and 2 tbsp sauce. Cook for a few seconds until bok choy wilts. Add chicken and scallions/garlic chives if using. Mix well and serve over rice. Cooked noodles can be mixed into the stir fry using a little more sauce if necessary.
  • If you like very spicy food, Thai Red Chiles sliced can be added to stir fry while cooking.
